5-Minute Stirfry (with broccoli, purple cauliflower and string beans)


During spring and summer I rarely have the desire to put lots of effort into preparing a meal. In the winter, yes, the routine and heat soothe me. In the warmer months, I want to just eat then get back outside :)

This took me literally 5.78 minutes. Enjoy! Feel free to use any veggies, I just used what was in the refrigerator. 


-Toss veggies in a large pan or Wok

- Drizzle with coconut oil

-Sprinkle with Himalayan sea salt and pepper

-Cover for 3ish minutes

-Toast a handful of pine nuts in a different pan, medium heat until the nuts starts to brown

-Check on veggies. Drizzle with balsamic vinegar, heat for one more minute, turn off stove.

Unite veg with nut= happiness.
